Why the Griddle?

There's a new cookbook out, extolling the virtues of grilling on a flat-top griddle. It's called, appropriately enough, Project Griddle. Stephen Raichlan, who's the author of the book, stopped by Tonia's Kitchen, to talk about how he came up with the idea of a cookbook dedicated to how you can get the best out of your flat-top. Stephen told Tonia he decided to cook a Japanese steak, as they do it in Japan. That is, with a flat-top. Stephen told Tonia his Waygu came out seared and crunchy on the outside, juicy and buttery on the inside. That gave Stephen ideas for more on the griddle, moving to shrimp. And behold! Stephen found that to be great. Thus, an idea for Project Griddle was born!

Dirty Eggs

No, there's nothing really dirty about the eggs themselves, the dirt comes courtesy charred fresh herbs that you grill on your new flat-top griddle. The flat-top griddle is newest must have for both expert and aspiring barbequers who really want their grills to sing. And no one knows more about how to get the most out of your new flat-top then Stephen Raichlan. He's the grillmaster behind the new cookbook Project Griddle. Stephen told Tonia's Kitchen that one of the ways he's putting to good use is in recipe called Dirty Eggs. Stephen says he takes fresh herbs, along with a circle of butter on the flat top griddle, and puts the eggs in the center. When it's all said and done, the eggs will have the "dirt" of the fresh herbs on them. Check out his recipe in Project Griddle, and enjoy!

From the Grill...To the Griddle

Everyone is always looking for newest, neatest trend in cooking, and this one doesn't have anything to do with the recipe or the ingredients, but rather a part the barbeque grill itself. Flat griddles are the newest item have, and no one knows how better to use them than Stephen Raichlan. He's the author of a new cookbook called Project Griddle. Stephen stopped by Tonia's Kitchen to talk about how the griddle works, why it's great to grill on, and what you can make with it. Stephen told Tonia he's making what's called a Piadina, basically an Italian quesadilla, and Peppered Pineapple on the griddle. He told Tonia both recipes are included in the book, and are delicious!
