We tend to think of Mediterranean food as fresh, light and flavorful, but there is a comfort food side to Mediterranean cuisine that's not as well known. Alex and Sonja Overhiser wrote the new cookbook, A Couple Cooks, and stopped by Tonia's Kitchen to talk about their recipe for the Creamy Mediterranean Chicken Skillet. It's a cream-based sauce, which adds to the heartiness of the dish. Both Sonja and Alex told Tonia they start with garlic, Olive Oil and butter, along with spinach for a true Mediterranean. Not exactly what you might be thinking when it comes to Mediterranean food, but it's delicious anyway!

Every Possible Variation of Cornbread...
...24 of them to be exact. That's how many varieties of cornbread you'll find in Anne Byrne's new cookbook, Baking in the American South, She stopped by Tonia's Kitchen with some thoughts on how to make really traditional southern cornbread, just like the kind she grew up with. Anne told Tonia she uses a white corn meal and no sugar. That, Anne says, makes for denser cornbread. She adds when you're making the cornbread in a skillet (as you should) make sure you get it out of the skillet once the bread is baked or it'll get soggy, and that's not something you want!
