We tend to think of Mediterranean food as fresh, light and flavorful, but there is a comfort food side to Mediterranean cuisine that's not as well known. Alex and Sonja Overhiser wrote the new cookbook, A Couple Cooks, and stopped by Tonia's Kitchen to talk about their recipe for the Creamy Mediterranean Chicken Skillet. It's a cream-based sauce, which adds to the heartiness of the dish. Both Sonja and Alex told Tonia they start with garlic, Olive Oil and butter, along with spinach for a true Mediterranean. Not exactly what you might be thinking when it comes to Mediterranean food, but it's delicious anyway!
Tonia’s Kitchen, a nationally syndicated radio show, is where food and wine lovers explore, practice and grow. A Light Potato Dish
Part of the reason we call it light, is because these potatoes are steamed in both stock and white wine. What a flavor profile that is. It's unique, but that should come as no surprise to fans of Debbie Wilson Berment. She stopped by Tonia's Kitchen to talk about her unique new cookbook, The Sagajo Experience. In this recipe, Debbie told Tonia that she uses kalamata olives and cooks the potatoes on a stovetop to make sure both the stock and the wine steams the potatoes to perfection. She serves the potatoes with green vegetables and uses this as a star side!
