You've probably seen tamales in better grocery stores, but you might not have tried to make your own. If I'm right, that's a shame because homemade tamales can be delicious! Margarita Carrilllo Arronte, who wrote the cookbook, Mexico, came by Tonia's Kitchen to talk about her recipe for Blue Corn 7-Layer Tamales. She takes well seasoned beans and other ingredients, and rolls it all together with the blue corn dough. Margarita then chops up the rolls, places them in corn husks and steam cooks them. They turn out soft and tender! Then Margarita serves the tamales in a sauce that's made of boiled tomatoes, chiles and scallions.
