Andy King, who co-wrote the new cookbook Baking By Hand stopped by Tonia's Kitchen to talk about his recipe for a Chocolate Ricotta Tart with Raspberry Jam. He, and his co-author Jackie King, start by baking a chocolate short dough crust shaped in small tarts. They then use very-high quality Ricotta and whip together with vanilla beans and sugar (or other natural sweetner). The cheese takes on a very smooth texture that's poured over raspberry jam (preferably homemade if possible) in the chocolate tart.
