For those of you who haven't been to Jamaica, beside missing out on a beautiful island, you also haven't tasted the magic that is authentic Jerk seasoning. Now you don't have to go. The executive chef of the New Castle Hill Inn in Newport, Rhode Island stopped by Tonia's Kitchen to talk about his Jamaica Jerk Marinade that came direct from the island itself! Chef Karsten Hart told Tonia he has four employees who came from Jamaica and taught him the recipe. He starts with two yellow onions, five chocolate habaneros, two lemon habaneros, one clove of garlic, one teaspoon of allspice and a teaspoon of thyme. He combines that with a 1/2 cup of salt and two cups of canola oil. Karsten blends it all together and uses it as a chicken marinade. After 3 days, he says your chicken will be very spicy, and the flavor will bring you over to Montego Bay!
