A Special Spaetzle
First of all, what is Spaetzle? It's a German-origin noodle dough that goes especially well with gourmet dishes. And Executive Chef Karsten Hart with the Castle Hill Inn in Newport, Rhode Island says his Spaetzle can't be beat! He told Tonia's Kitchen he uses his recipe on the inn's Foie Gras and it's pretty special. Karsten takes 4 eggs (2 yolks), a pound of flour, a cup of milk, a tablespoon of grain mustard, and a tablespoon of chopped martzen. He told Tonia to mix the wet and dry ingredients separately, then mix all together and place into a boiling pot of salted water. Drain the pot and work everything into a dough.
