These...Yams...Are...On....Fire!




The humble yam has mostly been thought of as a reliable, if not nutritious side dish. But one chef says the yam can be so much more than a yawner! Tanya Holland stopped by Tonia's Kitchen with as recipe for "Smokin" Yams. Tanya owns the Brown Sugar Kitchen in Oakland, California, and was voted that state's Chef Of The Year.  She told Tonia the yam has a natural sweetness that smoking can really enhance. She starts by roasting a peeled yam in the oven to make it tender. Toward the end, Tanya Covers the yam with oil, then places it a wood pellet smoker for about 15-20 minutes.  She serves it with some brown butter. Try it...you'll never see the yam in the same way again!
