It's a great time of year to roast vegetables. Especially seasonal, root vegetables like parsnips, turnips and carrots. Food author Mark Bitman, who wrote How To Cook Everything Vegetarian told Tonia the vegetables are especially tasty when roasted with olive oil and whole garlic. The genius of roasting belies its simplicity. Bitman says when you cook those veggies, you bring out flavor compounds that just aren't present when they're raw. In other words, they're delicious!
