A Different Twist on Chicken Marsala

And that twist involves the classic Italian-style ham known as pancetta. Dina Deleasa Gonsar, who wrote the new cookbook At The Kitchen Sink, stopped by Tonia's Kitchen to talk about her recipe for Chicken Marsala, which involves sautéing the pancetta until it's crunchy. And then Dina says you can add the sautéed chicken which has already been floured, along with mushrooms and shallots, sweet marsala wine, and a little heavy cream. It's delicious!
