Let's face it, a simple meatloaf recipe isn't the "sexiest" around, but one cookbook author is determined to change that around for meatloaf, and a lot of other humble meals. Kat Ashmore, who wrote the new cookbook, Big Bites, stopped by Tonia's Kitchen to talk about her recipe for meatloaf, and how it's a little on the lighter side thanks to less fat. But Kat told Tonia she makes up for the reduced fat content with a lot of flavor thanks to the use of caramelized onions and horseradish. As for the sauce, Kat says thanks to the last two ingredients, you can use a simple ketchup/chili glaze, or nothing at all. It's that good!
