As it is Passover time, Faith Kramer, who wrote the cookbook 52 Shabbats, stopped by Tonia's Kitchen to talk about her Passover-Friendly Mango Cheesecake with Cardamom recipe. She told Tonia to use either fresh or frozen mango, and just a little cardamom, because she notes a little goes a long way. She notes the cream cheese filling should be at room temperature when you put it altogether. And the flavor of the mango really offsets the richness of the cream cheese. And that of course is combined with the cookie crust that ties it all together. This cheesecake builds bridges because it takes an Eastern European tradition of cheesecake and meshes it with Spanish and east Asian-influences of Judaism and their traditions.
