Ming says he likes to pair it with a nice Riesling or other wine that has a SMALL amount of residual sugar. The reason, if there's just enough sugar, it will tone down the spiciness of the rice dish. Ultimately, when you're looking for a wine to go with a meal, choose one with flavors that will balance out the flavors of what you're making, and you won't go wrong.
