Let's ring in the New Year by talking about the power of the pear. They're delicious, they have excellent nutritional value and they're very versatile. So versatile in fact, they can even form the basis of a fantastic salad dressing. Winnie Stein, who wrote the cookbook Moosewood Restaurant Favorites, told Tonia's Kitchen that she cores and cuts up (but doesn't peel) a fresh pear into chunks. She adds water, apple cider vinegar, salt black pepper, Dijon Mustard, and honey or maple syrup into blender along with the pear. After it's blended, Winnie says to slow the blender down and add olive oil. The mix will become thick and flavorful, and bring out the freshness of crisp, cold salad vegetables. Pear-fect!
