So you have your turkey, but you might be a little worried when it comes to brining the bird. No worries! Chef Billy came by Tonia's Kitchen to talk about how to brine that turkey perfectly. First things first, what is a brine? It's a natural wall that locks the juices of your turkey in, and makes it moist. Chef Billy told Tonia it consists of a sugar and a salt. He combines maple syrup or agave syrup with cider to make a great brine. Chef Billy also says when you brine, practice! He says maybe this weekend, you try a trial with an oven stuffer roaster. When you cook the turkey, make sure and it's done, Chef Billy says to not leave it on top of a hot stove, because it will continue to cook, and get overcooked. Put the bird off to the side and let it cool!
