When you're cooking for the kids, sometimes its about what they see before they taste it. Kids love pizza, but sometimes the pizza they like (frozen mini-pizzas loaded with chemicals and preservatives) is not exactly the best thing to eat. But Registered Dietician Connie Guttersen has an idea she thinks might get the kids to very healthy, while at the same time think they're getting a treat. She told Tonia's Kitchen about her mini-"pizzas" that are not really pizza. Connie starts with white, great northern beans, which she rinses, drains and mashes into a circle. She then blends in goat cheese, oregano and parsley and layers fresh spinach leaves and roasted red peppers. When you blend it all together and serve it to the kids, they're enjoying a delicious pizza, and you're giving them something healthy. By the way, Connie says the kids she tested it on love it!
