Classic Almond Chicken...With A Modern Twist!



Almond Chicken. It's a delicious meal that has most people singing its praises well after the plates are clean.  The challenge though, is how to make it healthy.  Food Network TV's Robin Miller told Tonia's Kitchen she's got a great idea on how to accomplish that.  Robin told Tonia she takes chicken breast and coats it with Dijon Mustard.  Then she "soaks" the chicken in a bowl of blanched almonds.  Instead of egg, the mustard acts as the "glue" to hold the almonds together.  She then adds a can of diced tomatoes, baby corn, curry powder, along with salt, pepper and cilantro and simmers the chicken.  It's a delicious dinner that will have your guests raving!
