You'll Never Think Of Pork In The Same Way!

Rozanne Gold stopped by Tonia's Kitchen to talk about a fantastic vinaigrette that goes especially well with pork, but only takes one minute to make!  Rozanne, who's an accomplished food author and columnist for Cooking Light Magazine told Tonia about her Pistachio Lemon Vinaigrette that really brings out the flavor of grilled pork medallions.  She says the dressing itself requires no cooking, and makes an ordinary dish, extraordinary!



One Minute Pistachio Lemon Vinaigrette

4 TBLSP Olive Oil
1 TBLSP Real Maple Syrup
1 TBLSP White Balsamic Vinegar
1 ½ TBLSP Fresh Lemon Juice
1 TBLSP Mustard
3 TBLSP finely ground pistachios
Clove of garlic
¼ cup freshly grated Parmesan Reggiano cheese






Whisk together first five ingredients in a small bowl. Push a large clove of garlic through a press and add. Stir in 3 TBSLP of finely ground pistachios and ¼ cup freshly grated Parmesan Reggiano cheese.


Serve at room temperature.


Suggested serving - Pour over grilled pork medallions sitting on a bed of couscous. Garnish with fresh parsley.
