When making treats for a holiday party, there's always lots to choose from, when it comes to making food in “ball” form. There's rum ones, shrimp ones and another favorite, coconut! But author of What Can I Bring?Anne Byrn has another idea: Spinach Balls! She starts by combining 6 eggs, well wisked, with 1.5 sticks of melted butter, 6 oz of chicken flavored stuffing mix, 2 packages of thawed and drained frozen spinach and a cup of shredded Parmesan. Add some black pepper to the mix, stir, and roll the contains into 1-inch ball-like figures. Bake at 350-degrees for 12 minutes on a cookie sheet...and have a ball!
