Mashed Potatoes


So now that we've talked about the turkey and the stuffing, it's time to turn our attention to the mashed potatoes on your Thanksgiving plate.  Chef Billy from Restaurant Associates told Tonia's Kitchen to start preparing the potatoes the Wednesday before Thanksgiving.  You do this by cutting them, and leaving them in water inside your refrigerator.  Only add a little salt to the water, and when you cook them, don't over boil them, as that could mean you have a very loose potato.  Chef Billy also told Tonia to keep the potatoes warm and covered, don't let them get cold.
