Diabetic Diets Need Not Be Devoid of Flavor

Linda Gassenheimer, who wrote the 12-Week Diabetes Cookbook in cooperation with the American Diabetes Association, stopped by Tonia's Kitchen to talk about a delicious-diabetic friendly Pork Tenderloin recipe. She told Tonia she starts with a pork-tenderloin with the fat removed. Roast it in the oven until it reaches 145-degrees. Baste the tenderloin with rosemary, garlic, black pepper and olive oil. Bring some whole wheat linguini to a boil and serve with frozen green beans, which Linda says can be healthier and more vitamin-rich than fresh vegetables.  Serve the pork over the green beans and linguini, and enjoy!
