Unlike Sylvester the cat, you won't be doing much suffering while enjoying this summertime salad. Russell Cronkite, who wrote the cookbook A Return To Family Picnics, stopped by
Tonia's Kitchen to talk about this super salad. Cronkite takes four cups of Lima beans, corn kernels, sliced summer squash and adds one cup of sweet onions and chopped dill. He then makes a dressing with salad oil, celery seed, Dijon mustard, a little sugar and some cider vinegar. Mix with the vegetables and leave in the refrigerator overnight. If Sylvester had this salad, he might have forgotten about trying to eat Tweety!
1) 2 cups freshly cooked Corn Kernels2) 2 cups freshly cooked Lima Beans3) 2 cups sliced Summer Squash4) ¼ cup thinly sliced Sweet Onions5) 1 tbs. chopped fresh Dill6) 1 head Bibb or Butter Lettuce - cleaned (optional)
Preparation:1) In a large bowl...combine the corn, lima beans, squash, sweet onions, and the chopped dill...as well as the lettuce.2) Reserve 4 tablespoons of the dressing to drizzle over the finished dish, and pour the remaining warm dressing over the succotash.4) Toss well, and let stand at room temperature until service.
