How about a cool summer salad featuring nectarines? Amy Traverso, who's Yankee Magazine Senior Food Editor, stopped by Tonia's Kitchen to talk about how you can make this delicious salad that both plays off the sweetness of the nectarines, followed up by the more savory flavor profile of grape tomatoes. Amy told Tonia it's only nine ingredients, and it's a great addition to any outdoor picnic you might be going. Amy says one of the great things about the salad, it's chunky which makes it easy to pack in a jar or plastic containers. Easy to serve, great to eat!
½ pounds grape tomatoes, halved
3 ripe nectarines, cut into 1-inch chunks
3 ounces feta, crumbled
1 small red onion, diced
¹⁄3 cup firmly packed basil leaves, roughly chopped
¼ cup chopped parsley leaves
½ cup shelled, salted pistachios, roughly chopped
4 tablespoons good balsamic vinegar
4 tablespoons olive oil
Instructions
In a large bowl, toss the tomatoes with the nectarines, feta, onion, basil, and parsley. Just before serving, toss the pistachios over the salad, then drizzle with the vinegar and oil. Serve at room temperature.
