As the author of the book Modernist Pizza puts it: who doesn't love pizza? Very few says Francisco Migoya, who stopped by Tonia's Kitchen to talk about the book, and his inspiration behind it. Francisco told Tonia he's spent years deconstructing the pizza, traveling around and learning about the different styles behind the Italian pie. Francisco's book isn't just singular, but it's a three-volume set that originally began as a part of his earlier writing: Modernist Bread. Francisco says he included pizza in that series because pizza, in itself, is in the bread family. But as that book grew, Francisco says he needed to separate pizza from the rest, because there were so many stories to tell.
