No good pizza ever has poor
quality sauce, and this is no exception. Chef Francisco Migoya, who wrote
Modernist Pizza, stopped by Tonia's
Kitchen to talk about just how you make really high quality
pizza sauce, that'll be as memorable as the crust and cheese themselves.
Francisco told Tonia that sure, you can use canned tomatoes, but if you're
really looking for special flavor and you grow your own tomatoes (or have a
friend who does), grab the tomato leaf and smell it! Francisco says you'll find
the leaf itself smells more like tomatoes than tomatoes! Add a few of the
leaves to the sauce to really up the fragrance of the sauce...and of course the
flavor. Make sure you pick the leaves out before saucing the dough though!
