DIY Chocolate Bars!

 


 

And this Chocolate Bar is pretty healthy as candy goes! No cream in this, and no baking required. Dr. Michael Roizen and Dr. Oz Medical Director Dr. Michael Crupain came by Tonia's Kitchen with a recipe for a no-bake Chocolate bar that has all the taste and none of the guilt. Both doctors, who wrote the cookbook What to Eat When say you can make this chocolate bar fairly easily. Just combine pecans, walnuts, dried fruit, puffed wheat with cocoa powder and chocolate gnocchi. Add some vanilla and add the whole mix to a food processor. Afterward, form the mixture into balls and refrigerate. Boom! You've got a chocolate bar.


  • 1 c. walnuts, toasted
  • 8 oz. dried unsweetened Turkish apricots (I had a 6 oz. package only so I supplemented with golden raisins.)
  • 1/2 c. unsweetened cocoa powder
  • 1/3 c. unsweetened almond butter
  • 1/3 c. pecans, toasted, roughly chopped

Instructions

  1. Place the walnuts in a food processor and pulse for about 15 seconds until finely chopped but not smooth. Add the apricots and process for about 25-30 seconds until finely ground and just before the mixture begins to form a ball. Add cocoa powder and almond butter and process until all the ingredients are well blended and the mixture begins to clump together, about 20-30 seconds
  2. Transfer the mixture to an 8-by-8 inch glass baking dish. Spread and pat down the mixture with a rubber spatula to an even thickness. Sprinkle the chopped pecans over the top and press down again with a rubber spatula to set pecans. Refrigerate for an hour.
  3. Cut into 16 pars and serve.

Yield: 16
