Not Exactly An Easter Ham...But It's Close

 


Instead of baked ham this Easter, try grilled pork tenderloin. Chef Billy from Restaurant Associates came by Tonia's Kitchen to talk about his delicious, healthy ideas for grilling up some tenderloin for the holiday. Billy says it's a very healthy cut of the pig, since there's little to no fat here. He told Tonia you can either grill the meat whole or butterfly it , grill it up to 155-degrees and slice. The marinade Billy uses with this includes no oil since it is grilled, and that can cause a flare up with the burner. Instead he uses a dry rub that includes braised lemon or orange rind. It's a flavorful, healthy Easter dinner that goes well with the signs of spring in the air



Place the pork tenderloin on a preheated hot grill (450° to 550°) and cook for 4-6 minutes per side or until dark grill marks have formed and the desired internal temperature is achieved.
