An Easy Passover Chicken

And it's easy because the ingredients are probably already in your refrigerator or cabinet. Noted chef Dini Klein stopped by Tonia's Kitchen to talk about her recipe for Ratatouille Chicken. The contents, much like Ratatouille itself, are simple and humble.  But taken together and baked, this dish yields a gourmet flavor that will surprise and delight your Seder guests

  1. 2 chickens, cut into eighths
  2. salt and pepper to season
  3. 2 teaspoons paprika
  4. 2 teaspoons garlic powder
  5. 2 teaspoons onion powder
  6. 2 teaspoons oregano
  7. 1 red onion cut into wedges
  8. 4 cloves garlic minced
  9. 1 red bell pepper, sliced
  10. 1 pint cherry tomatoes
  11. 2 quash or zucchini cut into rounds
  12. 3 tablespoons freshly chopped basil
  13. 3 tablespoons balsamic vinegar
  14. 2 tablespoons honey
  15. 2-3 tablespoons olive oil to drizzle

  1. Preheat oven to 400 degrees.
  2. Place chicken on a sheet pan and season with spices. Add the vegetables and basil to the sheet pan and massage all with the balsamic, honey, and oil. Bake for 50 minutes until cooked through and golden. Serve family style!
