There's no question, this is is soup weather. But instead of getting your soup from the can, we at Tonia's Kitchen would like to suggest, a hearty, creamy chowder that's sure to please on these chilly days! Alana Chernila talked with Tonia about her easy-to-make corn chowder that combines a variety of herbs and spices to make for a deliciously unique light meal or snack. Alana told Tonia she takes fresh Oregano, Thyme and Mint (dried is okay) along with melting butter, leeks and shallots and fresh corn (although Alana told Tonia frozen works great too). She combines that with either stock or water and blends it all with millet and milk for a creamy consistency. She adds roasted red peppers and tops with some of the leftover herbs at the end. Alana says the herbs combine with the butter for a wonderful flavor that you're definitely going to enjoy!
