Friends Don't Let Friends Boil Their Ribs...



Simply put, ribs just don't taste good when you boil them.  Steven Raichlen, The King of Barbecue, came by Tonia's Kitchen to talk about the proper way to make ribs.  He told Tonia boiling takes the flavor away and changes the texture. He says ribs should not be "fall off the bone" tender when done, and when cooking baby back ribs, they should be cooked at around an hour and a quarter, more for spare ribs.
