Fish For Lunch...Or Dinner

I was thinking cod actually.  And this next recipe makes it easy to create a sumptuous cod dish that's equally at home for lunch and dinner. Everyday With Rachael Ray Magazine Executive Food Editor Nina Elder told Tonia's Kitchen about their Roasted Cod with Orange Radicchio.  It takes maybe 20 minutes tops to make and it comes out visually beautiful!  Nina told Tonia she roasts the cod in the oven with olive oil at 400-degrees until it's flaky (normally about 7 minutes).  She then tears the radicchio into pieces and tosses it with orange segments, orange zest and juice, parsley, salt and pepper.  She then takes the cod and serves it over the radicchio for a delicious summer treat!
