t's true, soup is not the most popular dish during the summer, mostly because a hot bowl on a 90+ degree day doesn't seem like the most appetizing choice. Even if it's a cold stew, sometimes a vegetable or seafood based broth doesn't always go great with the weather. Enter the cantaloupe! Tonia's Kitchen explored a delicious version from the Meals Made Easy Cookbook. The author told Tonia she takes two cantaloupes and puree them in a blender. You combine them with salt, and sprinkle with mint. It makes for a light, fragrant brew that's cool and fruity. Perfect for a hot day. Try a bowl with prosciutto and mozzarella sandwiches drizzled with olive. These two make for a great cold lunch combo!
