...that is to say the slow way. Hallie Baker, who wrote the cookbook Turtle Truffle Bark says it takes a little longer to make a good truffle, but it's worth it! Hallie told Tonia's Kitchen that to make a perfect truffle, go simple on the ingredients. She starts with light cream, tempered chocolate and butter (Hallie prefers a few ounces of salted butter.) Mix 3/4 cup of light cream with the butter heated in a heavy bottom pan to just before it simmers. Then add 1 and 1/2 pounds of tempered chocolate whisked in until everything is very well mixed together. Let it sit for a day, then use a melon baller, and roll the mixture into little balls with cocoa. Voila! Chocolate truffles the traditional way.
