When you think of delicious, authentic Italian dishes, you probably visualize something with a lot of tomato sauce. But let's try something new...and perhaps even more authentic and true to the art of Italian cookery. Michael Natkin, who wrote the cookbook Herbivoracious, told Tonia's Kitchen about one of his favorite ways to prepare pasta, and it's probably not the way that would first come to your mind. Michael says to get the true flavors of Sicily onto your pasta dish, start with capers, raisins, toasted pine nuts, parsley and orange zest. All these ingredients are very common in true Sicilian dishes, but not really here in the US. Michael serves this all up with caramelized, pan roasted cauliflower.
