Green Eggs! (without the ham)





Are you looking for a way to liven up your brunch egg dish?  Author Sally Sampson has a word for you: spinach! She told Tonia's Kitchen about a delicious scrambled egg dish that's actually composed more of the spinach, than the egg.  Sally starts with vegetable oil, a chopped Spanish onion, 2 garlic cloves, ginger root, chili pepper and curry powder.  Saute those ingredients and set aside.  Take a dozen eggs, along with a
generous amount of fresh spinach, kosher salt, unsweetened coconut.  Once that's cooked, combine the two and serve 5-6 guests. Note: it will be green, thanks to the spinach, but it'll be the taste that has everyone talking.
