Comfort Food That's Actually Comforting To Your Body

No doubt, you've been hearing a lot about gluten-free foods and the advantages of a 100-percent plant-based diet. But is there a way to replicate all the good taste and feelings of comfort foods like nachos or pasta while sticking to diet parameters? Steph and Adam sure think so. If you hang out on YouTube, you might have heard about these two. They are making viral videos just about every week, with recipes that allow you enjoy great taste, while still being plant-based!  Steph came by Tonia's Kitchen to talk about their new book: Plant-Based Meal Prep. Among the many things you can make, Steph told Tonia about a delicious Eggplant Rollatini that uses a cashew-base for a wonder "ricotta style" cheese-like food that is so close to the real thing, you might never notice the difference. Steph says start by thin-slicing the eggplant and frying it up, then bake everything together. We've included one of their videos at the bottom of the ingredients list. Eggplant Rollatini

1 1/2 cups cashews
1 garlic clove
juice of 1 lemon
1 tbsp nutritional yeast
1/2 tsp salt
1/4 tsp pepper
3 medium eggplants
3 tbsp olive oil
