Thanksgiving Week: Make Your Brussel Sprouts Sing

And you can turn that ordinary side dish into something special, just by roasting the Brussel Sprouts, with fig preserves. Chef Billy with Restaurant Associates stopped by Tonia's Kitchen to talk about this slight trick to making the vegetable really stand out on your Thanksgiving plate. Billy says you can pick up the preserves in the cheese section of your grocery store. Toss the sprouts in a few tablespoons of the preserves after they come out of the oven. Before you roast them, Chef Billy says blanche them in some salted water in the microwave. They won't be as leathery as the sprouts sometimes can be when they're cooked in the oven.
