That's a football term for all you NFL fans out there. A forward lateral is often the result of having to get creative with a play that busted out for one reason or another. It denotes improvising on the fly and creativity. Those sorts of things often catch the opposing team off-guard, but if you're caught off-guard in the kitchen, there's a new book that'll throw you a lateral. It's called (appropriately) Lateral Cooking. Author Niki Segnit joined Tonia's Kitchen to talk about why this book is different than your standard cookbook. She told Tonia it is more of a guide book than a strict recipe book, offering the chef a starting point, and showing them where it could lead, as opposed to where it will lead.
Niki offers you a chance to break out of the mold with recipes and add your own personal touch to otherwise mundane dishes that aren't memorable. There's a practical side too, offering solutions if you don't have enough ingredients for something, or want to take things in a different direction. Niki told Tonia she got the inspiration for the book while writing The Flavor Thesaurus. Niki says she became intrigued by learning about different kinds of flavor and what those flavors bring to the table!
