Rice, That's Not Rice...But it's Nice!

And while you can't really call this rice, rice...you can call it healthy.  That's because it's based on cauliflower. Lara Rondinelli-Hamilton who wrote The Diabetes Cookbook, stopped by Tonia's Kitchen to talk about her recipe for Cauli Rice Salad. The recipe is very easy, with the help of a food processor, if you want it fresh. You can also buy cauli-rice frozen. Combine that with Kalamata olives and green onions along with a low-carb vinaigrette and some feta cheese, for a healthy, flavorful salad, where you won't miss the real rice.
