Spinach, But Not as a Side Dish

Spinach is already appetizing, but this brings it to a new level! Anne Byrn, who wrote the cookbook What Can I Bring stopped by Tonia's Kitchen to talk about her Spinach Balls. She starts with a large mixing bowl and adds 6 wisked eggs, a stick and a half of melted butter, a box of chicken stuffing mix, frozen spinach (of course) and shredded Parmesan. Combine it all together and roll into 1-inch balls. Then bake those balls for about 12 mins. Crunchy and soft at the same time! Not a bad idea for a football party treat.
