Doing Mac and Cheese the Gourmet Way

You know, good old fashioned Macaroni and Cheese is not the first thing you might think of when it comes to Haute Cuisine, but consider this, a trendy Soho, New York City restaurant that's gaining attention from both restaurant critics and customers alike.  Michael Ferraro is the head chef at Mac Bar in NYC.  He came by Tonia's Kitchen to talk about the restaurant, and some of the unique things they do with good 'ol fashioned Mac N' Cheese!  Michael told Tonia that one of his favorites was something called Reuben Mac N' Cheese.  He takes corned beef that's been braised in-house, combined with a combination of Swiss and Mascarpone cheeses, sauerkraut, and sliced rye.  The mix is then tossed into homemade Thousand Island dressing (getting hungry yet?).  They add some pickles and, voila, a deli classic updated with a legendary American comfort food.  It's really amazing!
